Instructions

- Step 1: First, dice the onion and set it aside. Then melt the butter in a large pot over medium heat and sauté the onion, carrots, and garlic until softened and fragrant.

- Step 2: Next, add the sausage to the pot and cook until fully browned. While it cooks, mix the Better Than Bouillon with 4 cups of warm water until dissolved to create the chicken broth.

- Step 3: Once the sausage finishes cooking, stir in the flour until well combined.

- Step 4: Then slowly pour in the prepared chicken broth, stirring constantly, followed by the heavy cream and bay leaves. Bring the soup to a gentle boil.

- Step 5: Add the gnocchi and cook until tender, stirring occasionally. Season with salt and pepper to taste, then let the soup simmer. Remove the bay leaves.

- Step 6: Finally, stir in the spinach until wilted. Then serve warm and enjoy!
