This Creamy Sausage & Gnocchi Soup is a quick and hearty ~30 minute meal made with savory sausage, tender gnocchi, and a rich, comforting broth. It is an easy family favorite that is perfect for busy weeknights and colder days.
2tablespoonBetter Than Bouillon Roasted Chicken Base
4cupsWaterwarm (OR chicken broth - NO Better Than Bouillon Roasted Chicken Base if you use premade broth)
1cupHeavy Cream
2tablespoonButter(or olive oil)
3Dried Bay Leaves
Salt & Pepper to taste
Instructions
First, dice the onion and set it aside. Then melt the butter in a large pot over medium heat and sauté the onion, carrots, and garlic until softened and fragrant.
Next, add the sausage to the pot and cook until fully browned. While it cooks, mix the Better Than Bouillon with 4 cups of warm water until dissolved to create the chicken broth.
Once the sausage finishes cooking, stir in the flour until well combined.
Then slowly pour in the prepared chicken broth, stirring constantly, followed by the heavy cream and bay leaves. Bring the soup to a gentle boil.
Add the gnocchi and cook until tender, stirring occasionally. Season with salt and pepper to taste, then let the soup simmer. Remove the bay leaves.
Finally, stir in the spinach until wilted. Then serve warm and enjoy!
